Mr Reboul offers you creative and fun cuisine. It is cooked with the precision of a scientific laboratory. Nothing is left to chance, with ingredients weighed down to the last gram, cooking temperatures accurate to the degree and measurement of humidity levels when reducing sauces … The utensils also seem to be straight out of a research centre: syringes, test tubes, phials and liquid nitrogen!

The Calisson
This confectionery made of sweet almonds and crystallised fruits is a great gourmet speciality of Aix en Provence and is still made the original way that goes back to 1473. The first calisson factories were set up in the 19th century and by the early 20th century Aix was world capital of the almond trade.
Today, Aix is home to about 20 manufacturers, they perpetuate four centuries of Aix tradition.
